Health department consumer alert issued for Bloomfield’s Spork Pit

The Spork Pit restaurant in Pittsburgh’s Bloomfield neighborhood has been cited for multiple violations by the Allegheny County Health Department.
According to a Health Department inspection report from April 23, the Texas-style barbecue restaurant has been vacuum-packing food items and using a sous vide machine to reheat the foods at unsafe temperatures.
Sous vide is the practice of cooking or heating foods that have been vacuum-sealed in a water bath.
Spork Pit was ordered to stop this practice during previous inspections dating back to October, Health Department records show.
The most recent inspection also found that some hot food — including brisket, sausage and beef ribs — were not held at safe temperatures in holding cabinets.
No one from Spork Pit was immediately available for comment Wednesday.
